Palace Cafe Adds Pastry Chef, Therapeutic Rec Expert

The Palace Cafe has added Lacey Brown Wissen as pastry chef.
Wissen studied under the mentorship of co-owner James Shrader for more than a year as an intern.
She brings an interesting background to the position of pastry chef.
In addition to her experience at the Palace Café, 1301 E. 15th St. on historic Cherry Street, Wissen earned a bachelor’s degree in leisure and a master’s degree in nutritional science from Oklahoma State University. Wissen also completed an internship at the University of Utah’s Neuropsychiatric Institute and is a Certified Therapeutic Recreation Specialist.
She teaches yoga classes at St. John Siegfried Health Club and also offers private lessons.
“Lacey is the ideal addition to Palace Café,” said Shrader, who owns the café with his wife Brooke, and is chef. “We feel strongly about using the highest quality ingredients to create original dishes served in a comfortably trendy atmosphere.”
Wissen shares a commitment to provide a world-class dining experience, Shrader said.
“As a yoga instructor as well as a chef, she possesses a unique perspective on food, along with a passion for developing dishes that appeal to our senses as well as nourishing our bodies,” Shrader said.
Wissen intends to continue her education under Shrader to extend her expertise beyond desserts.
“Simple, decadent and served in reasonable portions,” Wissen said, “my handmade dishes are designed to nourish both body and soul to improve our guests’ overall well-being.”
